Wholesome, creamy yogurt can be such a delightful treat unless, of course, you are looking to abstain. Whether you have a dairy allergy or prefer a vegan diet or simply looking to cut down on your dairy intake, it can be difficult to resist the appeal of a bowl of creamy, wholesome yogurt.

Well, I’m here to tell you, you don’t have to suffer anymore! Because I have a special treat just for you! Did you know that you could be making your own fresh, wholesome, delicious yogurt out of nuts? Yes, yogurt out of nuts. And no, I’m not nuts. Well, maybe a little. But that’s a different topic! Cashew and macadamia nuts make very creamy nut milks and plant-based milk products. I’ve written a book on the subject that comes out this Summer but in the meantime, I’m sharing my recipe for homemade plant based yogurt.

If you’ve ever wanted to make your own plant based yogurt, here’s your opportunity! Its actually quite simple. Just follow my instructions below. You’ll soon be swooning over a bowl of your very own!

Makes approximately 4 cups
Keeps up to 2 weeks in the refrigerator.

INGREDIENTS:

2 cup cashews, soaked
4 cups water, filtered/distilled
2 teaspoons probiotic powder

PREPARATION:

Place nuts and water in blender and process until smooth.
Pour the nut milk into a medium saucepan and heat over medium-low heat until it reaches 100 F. If the mixture is too hot, it may destroy the culture. Remove from heat and whisk in the probiotic powder.

Pour into a large jar, wrap in a kitchen towel, and place in a warm place to culture for 8-12 hours or overnight. Yogurt will thicken and will start to taste and smell slightly tangy. Refrigerate until ready to use.
TRICK OF THE TRADE: You may need to experiment with the length of time yogurt cultures and amount of culture you use. Everyone has different taste preferences and experimenting will allow you to customize your yogurt to your taste.

VARIATIONS AND SUBSTITUTIONS:

Alternatively, you can substitute either a vegan yogurt starter or 2 tablespoons of store-bought nondairy yogurt for the probiotics.
